Calabrese Pinwheels + Sparkling Pomegranate Juice

I love cooking, but I also love a nice easy recipe. Sometimes I don't want to deal with all the dishes that come along with preparing a fancy intricate meal or appetizer, you know? I'm so excited to share one of the easiest and yummiest recipes. You'll be making this all season long, for the holidays, and even after! I've also included an easy and fun drink recipe that's perfect for all ages!

Sparkling Water
Cranberry Pomegranate Juice
Blueberries

Creminelli Calabrese (Sliced)
Cream Cheese
Cucumber
Tomato
Basil

These recipes are really simple. I'll start with the dish and explain the drink after. I picked up a pound of sliced Creminelli Calabrese from my local Whole Foods. In case you're having trouble finding it (I must have walked around the store 10 times looking for it), you can find it in the deli department where you would pick up sliced lunch meat. To put these together, put a dollop of cream cheese right in the center of the slice of calabrese. Squeeze the corners to create a pinwheel shape, then top with sliced cucumber, tomato, and basil.

I used herb & chive cream cheese to give it a little something extra and it was perfect! Also, I definitely recommend folding these into a taco shape instead of a pinwheel because it's SO much easier! I couldn't get those little guys to stay in place. If you're an expert food shaper, go for it, otherwise, learn from my struggles and stick with a standard shape, like a taco. haha

You could also leave them flat, and place them on top of a cracker! That would be yummy as well! And since we're talking options here, I made two batches of these - one with dairy free cream cheese and one with regular!

For the drink, I combined 2/3 cup sparkling water (I used lime sparkling water) and 1/3 cup cranberry pomegranate juice. Serve it over ice and garnish with blueberries! - Easy peasy! 

These are perfect to serve at holiday parties, regular parties, or even just to snack on while you're watching movies! They're also so versatile so you can definitely modify them to fit the preferences of your guests!
