Pomegranate Mint Margarita
Since summer isn't technically over until September 22nd and the weather is still nice and warm here in California, I thought I would sneak in one more fun summer-y cocktail. This pomegranate mint margarita totally caught me off guard and I'm wishing I had been making this all summer long!
I'm usually not a big pomegranate fan, but after making this drink I might be rethinking that. The fruit I purchased wasn't the ripest it could be (so the color was less vibrant than normal) but it was SO sweet and delicious, while also being the perfect amount of sour. Does that make sense? Probably not. Ha!
Previously, the sour flavor of pomegranate was what made me slightly dislike it. When I cut this one open and tried it, it was still sour, but with the perfect amount of sweet to make it a pleasant flavor instead of overwhelming. Again, that may not make any sense, but seriously y'all - it was TASTY!
So of course, whenever I get my hands on a tasty fruit, what do I do? Add tequila and make it a marg!

But after trying it, I realized the subtle sour flavor of the pomegranate and the tangy lime juice are actually the PERFECT complement to a salted rim. With that said, I definitely recommend loading that glass up with salty goodness!
