Growing up, one of my favorite things about Christmas time were the snowball cookies my mom used to make! The other day, I was having a serious craving and had to make them (and of course, share)! My mom used to make them with nuts in them (pecans or walnuts I think?), but since I'm an adult and think pecans/walnuts are icky, you can bet I replaced them with mini chocolate chips! OH YUM! - I also made these completely GF/DF, so if you're like me, modifying this recipe is SO simple!!
What You'll Need
2 Cups All-Purpose Flour
1/4 Cup Sugar
1/2 Cup Mini Chocolate Chips
1 Cup Butter - Softened
1 Tsp. Vanilla Powdered Sugar
Heat your oven to 325°
Combine all the ingredients (except the powdered sugar) in a bowl.
Using a beater, mix them together on low (until well mixed).
Shape the dough into small balls (about 1-inch) and place on a cookie sheet. They don't expand very much, so you don't need to leave too much space between them!
Bake 18-25 minutes. They shouldn't be doughy, these are more of a hard cookie.
Cool for 5 minutes, then roll them in powdered sugar while they're still warm.
After they've cooled completely, roll them in powdered sugar again.
To make these GF/DF, I just used a GF all-purpose flour, vegan butter, and vegan chocolate chips. So simple!
